Cornish Sea Salt, already widely known for deliciously salty seasonings and kitchen essentials, is delighted to launch an innovative new product to its food manufacturing range. Designed to address the challenges faced by food manufacturers to lower sodium but maximise flavour, TekSalt is a minerally-balanced sea salt, packed with Celtic sea minerals and electrolytes so it is lower in sodium while delivering an intensely salty hit. The range is 100% natural and provides seasoning solutions to meet a variety of production requirements, from base level seasoning, through to finishing, at a commercial price point.

 

TekSalt brings innovation into the natural sea salt process by harnessing the careful balance of sea salt minerals and electrolytes; including calcium, potassium and magnesium, to give reduced sodium levels and high taste intensity. TekSalt offers a natural alternative to other lower sodium salt options that can have a negative impact on taste and health benefits.

The development of TekSalt was led by the objective of creating a high quality lower-sodium sea salt, that maximised flavour, with a clean label, and at a commercial price point. Combining all these elements makes TekSalt a viable alternative to PDV or potassium based alternatives to reduce sodium. 

 

TekSalt is also a sustainable option for food manufacturers as it is produced in the Cornish Sea Salt eco-friendly salt house powered by solar and renewable energy. Cornish Sea Salt has BRCGS accreditation.

What it does: 

 

TekSalt has been created to replace commonly used Pure Dried Vacuum (PDV) salt. PDV salt is a refined salt that is often used to ensure safety and purity standards are met. The aim of TekSalt is to reduce sodium levels in food manufacturing and help food manufacturers reach the World Health Organisation (WHO) and Public Health England (PHE) sodium-reduction targets without sacrificing flavour. The balanced mineral profile of TekSalt means less salt is needed to maintain the flavour profile of products, reducing the need for expensive and time-consuming developments to adjust existing recipes to account for change. 

 

TekSalt can be used to improve the flavour profile of food made by manufacturers, as well as removing the bitter metallic taste that high potassium sodium-replacers create. Some lower sodium salts have high potassium which comes with its own negative health effects, but TekSalt balances sodium and potassium with magnesium.

 

Food manufacturers can add TekSalt to products including ready meals, bakery products, sauces and dips, snacks such as crisps and dairy, meat, fish and plant-based products to ensure they have lower sodium levels but high taste. 

 

TekSalt has the added benefit of a clean label ingredient statement of “sea salt” – adding premium value to the end product as an alternative with perceived health benefits over standard salts. 

 

90% of food service professionals preferred TekSalt compared to the leading potassium-based low sodium salt. A panel of food service professionals were asked to rank samples in order of flavour profile, including complexity and layers of flavour, as well as smooth mouth feel and bitterness. 

 

How it works: 

 

The electrolytic bitten, a natural derivative of the sea salt harvesting process, has been optimised through painstaking development to generate an ultra-rich natural cocktail of minerals that is used to laminate sea salt crystals. The unique sodium-depleted bitten is highly concentrated in natural flavour-enhancing minerals, all derived from the purest oceanic waters. With this enhancement, Cornish Sea Salt has created a range of food grade salts with a balanced mineral profile, rather than just the addition of potassium, to provide an intense salty flavour, so less salt is needed to maintain the flavour profile food manufacturers need.
